Gluten is a protein found in barley, rye and wheat, formally known as prolamins. It’s the components that give wheat the elasticity when producing through from wheat. Also gluten is naturally occurring, but it can be extracted, concentrated and added to foods and other products to add protein, texture and flavor in it. It also works as a binding agent in order to hold processed foods together and give them shapes.

Gluten free diet is a diet plan that is produce and excludes all foods contain the protein called gluten. The diet will not be cross contamination with gluten containing ingredients during production of the diet.

What Diseases And Condition Should Avoid Gluten?

  • Celiac disease: People with celiac disease should avoids gluten foods for the rest of their life's. A little amount of gluten in the diet can trigger an immune system activity that damages the lining of the small intestine [duodenum and jejunum]. The damage can prevent the absorption of vital nutrients from foods in the G. I. T.

  • Gluten intolerance: The person should avoid gluten because the digestive system can not tolerate or digest gluten, the symptoms may show up from child hood while others is in adulthood. The symptoms includes diarrhea, constipation, fatigue, headache, vomiting and abdominal pain.

  • Gluten ataxia: Is a rare neurological condition. An auto immune response to the gluten found in wheat, rye and burley after consumption which can damage the brain [cerebellum]. The symptoms of gluten ataxia includes:

  1. Trouble in speaking.
  2. Trouble in moving the eyes.
  3. Difficulty in using the hands, arms legs and fingers.
  4. Poor coordination.
  5. Poor balance.

  • There is tingling in the extremes. In order to treat gluten ataxia then avoids all gluten foods for life. 

  • Dermatitis herpetic form: This diseases also known as DH is a gluten rash or the celiac rash. It is a long term chronic skin conditions that get people confused as an infections from micro organisms. It causes itchy and blisters. In fact after lots of research the DH diseases is cause directly by sensitivity to gluten. For positive response to treatment, then avoids gluten foods for ever. Gluten such as wheat and products, barley and barley products and rye and rye products should be completely restricted.

lactose free diet is any diet that is design and produce without milk and any milk products in order to avoid or limit lactose [sugar in milk]. The diet should be rich in other nutrients found in milk such as calcium and protein to meet up the person’s recommended intake.

The disease that must avoid lactose [sugar in milk] is called lactose intolerance. This is the inability to digest and absorb milk and dairy products containing lactose. Lactose intolerance is cause by lack of the enzymes lactose or shortage of the enzyme lactose in the body. The enzyme is produce by the small intestine that is needed to digest lactose for absorption in G.I.T. Some babies are born with lactose intolerance as an in born error of metabolism and to others it develops gradually as the body produces less lactose. Research has been found that some medical prescriptions such birth control pills, tablets for stomach acids and gas, calcium chew contains lactose which should be avoided if one is on lactose free diet.

What Are Symptoms Of Lactose Intolerance? 

nausea, bloating, diarrhea and cramps this symptoms are shown between 30 minutes- 3hours after taking milk or dairy products that contain lactose depending on individual digestive system. Some people can react to small amount of lactose while some reacts to large amounts of lactose so the severity of the symptoms depends on individuals ability to tolerate lactose.


What Foods Contains Lactose?

All animal milk and dairy products:

  • Whole milk 🥛

  • Skim milk

  • Whole yogurt 

  • Skim and fat free yoghurt

  • Butter from milk

  • Dry milk

  • Cheese 🧀

  • Whey

  • Curds
All the above foods listed must not be included in the diet to manage lactose intolerance. Avoid foods that are package and labeled “ contain certain amount of milk” or lactose. So therefore it is necessary and very important to always read labels of package foods. Check labels of snack such as cake, pizza. Tea and coffee creams, salad 🥗 creams, chocolates and candies, bread 🍞 and other baked foods, noodles, margarine and butter.



Types Of Lactose Control Diet


There two major types of lactose control diets for people with lactose intolerance.

- Low lactose diet: for those that can eat little amount of dairy products with small lactose in it.

- Lactose free diet: for those that can not tolerate any type of dairy products should go for complete lactose free diet.



What Foods Are Lactose Free?   

  • Milk from plant origin such as coconut milk, soy milk, tiger nut milk , sesame milk, rice milk, oat milk, baobab fruits milk all are lactose free but are low in calcium (a mineral that is needed for strong born formation). Baobab fruit pulp is very high in calcium, so it is advisable to add the baobab fruit pulp to other milk from other milk from plant origin as enrichment to meet up with calcium intake in order to prevent muscular skeletal disorder [MSD]

  • Infant lactose free formula: infant formula that are produced free from lactose for babies that are born with in born error metabolism, lactose in tolerance.

  • Vegetables: spinach, pumpkin leaves, baobab leaves, water leaves, bitter leaves okra, cabbage, broccoli, cucumber, carrots, garden eggs etc.
  • Nuts and seeds: Such as groundnuts. Coconut. Walnut. Tiger nut. Cashew nuts. Melon seeds etc.
  • Cereals and whole grains of all types.
  • Eggs are lactose free.
  • Meat such as beef, lamp, puck all are Lactose free.
  • Fish: sardine, herring, mackerel
  • Vegetable oils.
Note: It is allowed to add liquid or powder lactose enzyme to milk to break down lactose if one feel like consuming milk from animal origin in order to get another nutrients such as calcium.
